Over 30-35 weeks each year, flowers mature into coffee cherries. The coffee cherries are ripe for harvest when they turn bright red. Each coffee cherry is selectively hand picked to ensure quality. Our coffee is harvested annually from November to January.

How do our coffee beans go from beautiful Honduras to your favorite cup of coffee? Here is the story of who we are and how we grow, harvest, and roast the coffee that our family is proud to share with you.

GROWING OUR COFFEE

We begin with green coffee beans on our coffee plantation Finca el Gavilán. Finca el Gavilán has been family operated in the Santa Barbara mountains of Honduras since 1954. The Maldonado family has grown and harvested coffee for three generations. The unroasted green coffee bean is actually the seed of the coffee plant. We use 100% Arabica coffee on our plantation. It took 3 years for our plants to begin producing coffee fruit that was ready for harvest.

PROCESSING OUR COFFEE

After we harvest the coffee cherries, we process the cherry to remove the coffee bean. Removing the outer layers of the coffee cherry must be done quickly to ensure freshness. On our plantation, we use the “washed coffee process” method. Washed coffee process: First, the coffee cherry is run through a depulping machine. It is then fermented with microbes to break down the pulp. Then the coffee beans are purified through a vigorous washing process. After washing, the coffee beans are dried for 12 days to reach 12% humidity. Next, the coffee bean is milled in a machine to remove the parchment layer. The green coffee beans are then graded and sorted.

Next is one of the most important steps for our coffee beans. Our green coffee beans are roasted in small 10 lbs batches by our local partner in Richmond Hill, Georgia. We roast our coffee beans at a variety of temperatures and time durations. This creates our range of dark, medium, and light roasts. Each roast highlights different levels of caramel and chocolate notes.

Our coffee is now ready for you to enjoy! We sell our roasted coffee beans whole, as well as custom ground to order. Whether you love espresso, french press, pour over, etc. we have a grind for your favorite brew.
